Michelin Guide 2026: 14 Starred Restaurants in Argentina, Including 4 New Stars
The Michelin Guide has unveiled its 2026 selection for Buenos Aires and Mendoza, rewarding a total of 14 starred restaurants. Beyond the three levels of gastronomic recognition, the guide also incorporates new establishments and honors talented professionals through its Special Awards.
Aramburu Retains Its Two Stars, Four New Establishments Gain One Star
In Buenos Aires, Aramburu remains the only restaurant with two Michelin Stars. Chef Gonzalo Aramburu, whose establishment is located in Recoleta, offers a surprise tasting menu that combines technique and innovation, maintaining unanimous praise from the Michelin Guide inspectors.
Four new restaurants join the one-star category this year. In Buenos Aires, Han (Villa Crespo) is among the four rewarded; it features two contemporary tasting menus led by owner-chef Pablo Park, whose ceremonial mandu (Korean dumplings with traditional flavors) caught the inspectors' attention. In Mendoza, three establishments have reached this milestone: Cal, led by chef Enzo González Petra, offers a menu based on products from the family vineyard; Centauro, a former manor turned restaurant, features a creative menu by Colombian chef Aris Pabón; and La VidA, part of the Susana Balbo Winemaker's House & Spa Suites, where the seven-course menu creates a connection between cuisine and winemaking.
Expansion of the General Selection and Two New Bib Gourmands
The 2026 selection has expanded to a total of 89 establishments, including 11 Bib Gourmands (a category dedicated to excellent value for money). Two new entries in this category in Buenos Aires are Chuchú, located within the National Railway Museum with a pleasant terrace and porteño cuisine characterized by a relaxed spirit; and Garabato Bistro, a neo-bistro next to Núñez train station, where Clara Corso and Lucas Canga offer traditional cuisine with contemporary touches.
Thirteen new establishments join the main selection: seven in Buenos Aires (Casa Palanti, Casa Veltri, José El Carnicero, Kobito, Ness, Nika Club Omakase, Presencia) and six in Mendoza (Antigal Authentic Flavors, Awasi, Clos de Chacras, Crux, Diam's, Nube), bringing the total number of recommended restaurants to 64.
Green Star and Michelin Special Awards Distinguish Committed Talents and Visions
Cal joins the community of Green Stars, a distinction reserved for restaurants that inspire inspectors with their committed vision of the future of gastronomy. The establishment in Mendoza reflects this orientation with its unique menu integrating the cycles of nature and ingredients grown using organic or biodynamic farming techniques.
The Michelin Special Awards recognize four talents: Enzo González Petra (28 years old, chef at Cal) receives the Young Chef Award; Nicolas Cordeiro, maître d'hôtel at Aramburu, is distinguished for his remarkable approach to service; Camila Torta, overseeing the wine cellar at restaurant Azafrán (Mendoza), earns the Sommelier Award; Flavia Arroyo, chef barmaid at Casa Cavia (Buenos Aires), is honored for her creative approach to signature cocktails. The selection also includes 11 restaurants awarded the Green Star, with one new addition.
